Lecithin is the commercial name for natural occurring mixture of compounds more accurately identified as phophatides or phospholipids, the two B group vitamins choline and inositol and amino acid methionine. It is needed by every cell in the body and is a key building block of cell membranes. Lecithin protects cells from oxidation and largely comprises the protective walls that surround the brain. In fact 73% of the total liver fat is lecithin and 30% of the dry weight of the brain is lecithin.
Lecithin is a major source of choline which aids the digestion of fats. Choline helps the body to burn fat, thereby acts as an agent supporting weight loss. As choline increases fat metabilism, it has been shown to lower blood cholesterol. Choline is also part of the neurotransmitter, acetylcholine. A sufficient intake of choline, primarily via the consumption of lecithin, is believed to have a positive effect on some mental functions, especially those connected to memory. The natural sources of lecithin include cold pressed vegetable oils, egg yolk, nutsand seeds, but most lecithin is derived from soya beans.
